Spanish in origin, the chorizo is seasoned with salt and a variety of paprika which gives it its rusty color and slightly fruity taste. It’s been around since the 6th century and the French Basque Country is a significant chorizo producer. With its long, thin U-shape, it’s prone to desiccation so best to eat it quickly – with the exception of the MAISON CISSON chorizo of course, which will keep forever!
