Traditionally, the real Jésus de Lyon was made before Christmas, using the best casing and the best parts from the best pig. It’s made to be enjoyed amongst family, and it has a coarse mincing and a diameter of 10cm. It hasn’t been stringed, but it’s swathed in its casing and netting just like a newborn.
